These Healthy Pancakes Only Have Four Ingredients
If I could eat pancakes for breakfast, lunch, and dinner, I would.
That’s a bit of a stretch, but it’s almost true. What is it about pancakes that just feels so right? They’re definitely a comfort food for us, and the fluffy, buttery, sweet, deliciousness in each bite makes me forget about everything else and takes me back to being a kid again, when my mom would make them for us on Saturday mornings.
I came across this recipe years ago and had been meaning to try it for the longest time, but I honestly forgot about it, and never got around to it. Then, a few weeks ago, I was watching Live with Kelly & Ryan and they made them on the show! I took it as a sign, so I broke out the saved note on my phone (I copy and pasted the recipe from some website that for the life of me I can’t remember) that had the ingredients and one sentence on how to make them and I got to work.
Here’s what you’ll need:
Ingredients:
ripe banana
2 eggs
1/3 cup of instant oats
1/2 tsp of baking powder
1/2 tsp of vanilla (optional)
dash of salt (also optional)
Directions:
Put all of the ingredients in a blender and blend on high for 30 seconds to a minute.
Pour onto griddle or pan and flip after about one minute on each side. Don’t be surprised if the pancakes are a little darker than usual, as the bananas will make them look like that. They’re not burnt!
We put syrup on ours (which takes them from healthy-ish to not healthy at all) but peanut butter sounds even better.
