PJ's Family's Crockpot Stuffing

I can’t believe we’ve never shared this recipe on the blog before, but it’s a good one!! It’s an especially good one to make this time of year, when the weather outside is frightful so cold that all you want to eat is something warm and comforting.

PJ makes his family’s famous crockpot stuffing every year for the holidays, usually at Christmas but always at Thanksgiving. It’s become a staple in our family and that’s because it’s sooooooo delicious. He got the recipe from his aunt Lisa who also makes it during the holidays, so we get to enjoy it more than once.

As our friend put it last night, this recipe is more of a “non-recipe”. We have never officially written it down before, and PJ changes it up a little bit every time he makes it, but we did our best to get the measurements right for you so that you get the gist of how it comes together. Please feel free to add however little or much of the ingredients as you like!

Ingredients

  • 1 store bought rotisserie chicken

  • 1 box of cornbread mix

  • 4 stalks of celery, diced

  • 1 yellow onion, diced

  • 4 cups of chicken broth

  • half a loaf of French bread

  • 2 tablespoons salted butter

  • 1 tablespoon rubbed sage

  • 1 tablespoon rosemary

  • 1 tablespoon thyme

  • salt and pepper to taste

Directions

  1. Make the cornbread according to the box directions

  2. Dice the celery and onion and sauté both in a pan with butter until translucent and soft

  3. Take all the meat off the chicken and put in a crockpot

  4. Transfer onion and celery to the crockpot

  5. Add in sage, rosemary, thyme and salt and pepper

  6. Pour in chicken broth

  7. Slice the French bread and add it right to the crockpot and mix

  8. Once the cornbread is finished, take it out and let it cool before adding all of it to the crockpot and mix well

  9. Let it sit and let all the bread soak up the liquid, about 20 minutes

  10. Serve warm and enjoy!
