The Best Green Goddess Dressing

I have been wanting to switch things up for lunch lately, and since we’re doing our best to take our health and wellness much more seriously this year, I wanted to commit to eating salads for lunch every day. The only catch is that they have to be yummy and not at all boring.

One of my favorite salads of all time is the green goddess cobb salad at Panera, so I decided I would look up a good green goddess salad dressing recipe that I could make myself at home. I found this one from Love and Lemons and it checked all the boxes and was soooooo good.

The flavor was light, fresh, and crisp, without being too overwhelming with all of the different herbs.

Here’s how to make it, straight from Love and Lemons…

Ingredients

  • 1 cup whole milk Greek yogurt

  • 1 cup parsley

  • 1 cup mixed soft leafy herbs, dill, mint, tarragon and/or cilantro

  • 2 tablespoon chopped chives

  • 2 tablespoons lemon juice, plus ½ teaspoon zest

  • 1 tablespoon extra-virgin olive oil

  • 2 teaspoons capers

  • 1 garlic clove

  • ¼ teaspoon sea salt

  • Freshly ground black pepper

Instructions

  1. In a food processor, combine the yogurt, parsley, mixed herbs, chives, lemon juice, zest, olive oil, capers, garlic, salt, and pepper. Pulse until well combined. Season to taste.

  2. Serve as a dip or toss with salad greens. Store in an airtight container in the fridge for up to 5 days.
