A Healthy Mediterranean Salad That's Perfect for Meal Prepping
We’ve been wanting to eat healthier this year, and part of that is prepping our meals ahead of time so we know exactly how much and what we’re putting into our body.
I came across this recipe for a balsamic Mediterranean salad last month from @violetwitchel and I immediately knew I wanted to make it. It looked so colorful and flavorful and like it was bursting with goodness.
And you know what? It is!
This is so so so yummy and holds up really well in the fridge, which makes it perfect for saving for later and meal prepping. I could also see this being mixed in with plain ole’ lettuce greens, or even just using the dressing on a regular salad because it’s so flavorful.
